Highland Organics is the brainchild of organic farmer Bill Smillie. For many years Bill has been operating his farm in the Southern Highlands town of Moss Vale, NSW, Australia using organic farming methods and is fully certified with Australian Certified Organics. Bill has always dreamt of converting his organic milk into beautiful organic cheeses but finding the right person to work with was very difficult. 
When he heard that John Fairley of Picton, NSW, Australia, was building a milk processing plant next to his dairy he approached him with the idea of obtaining organic certification for the factory so that John could bottle organic milk and Bill could make organic cheese. Consequently, Bill and John created Highland Organics as the brand for their organic range of cheeses.
Over the years Bill had made many connections in the organic industry and was able to source most of the cheese making equipment as well as a master French cheese maker. Andre and Annie Poirot, hail from St Laurent in France where they are part of a long line of cheese makers. Andre, with the assistance of his wife Annie, has been making cheese for nearly fifty years and knows just about everything there is to know about it. Andre was very keen to come on board and start working for a small processor again. He has developed a number of personal varieties of cheese that we are yet to tap into. Andre has been making cheese all his life and has received a number of awards including five for Highland Organics.
Our factory achieved organic certification with Australian Certified Organic for processing milk and cheese. We are audited annually to ensure that we follow all the correct procedures for processing organic mik and cheese.
In 2009 Bill moved his production off-site to his new factory at Moss Vale and decided to go it alone. Andre and Annie are still with Bill producing their beautiful cheeses. Country Valley continues to supply Highland Organics' cheeses to all our customers.
